Simple Raspberry Parfait in a jar

  • 170 gram Driscoll’s Raspberries
  • 1 Tbsp. plus 2 teaspoons honey, divided
  • 2 Teaspoons fresh lime juice
  • 250 ml plain Greek yogurt
  • 150 gram purchased lemon pound cake, cubed
  • Fresh mint leaves (optional)

A perfectly easy parfait pairing juicy raspberries with tangy Greek yogurt and lemony pound cake. With special thanks to Karly Claire Gomez, @ASimplePantry

Directions

1. Place 1 package raspberries into a medium bowl.
2. Add 1 tablespoon honey and 2 teaspoons lime juice.
3. Stir gently to coat raspberries.
4. Allow raspberry mixture to rest 15 minutes or until syrup develops.
5. Divide 250 ml yogurt between four small jars.
6. Drizzle each parfait with 1/2 teaspoon of remaining honey.
7. Divide 150 gram (or more if you like…) cubed pound cake between jars.
8. Top each parfait with a heaping portion of raspberries.
9. Garnish with mint if desired.

Serve Simple Raspberry Parfait immediately.
