Mixed Berry Ice Cream Pie
- 1500 ml purchased vanilla ice cream, softened
- 130 gram mixed Driscoll’s berries, finely chopped
- 1 purchased 23 cm graham cracker pie crust
- Whipped cream, for serving (optional)

Place 1500 ml softened vanilla ice cream into a large bowl.
Add the mixed berries.
Use a spatula to gently fold ingredients together and make sure not to smash berries too much.
Spread ice cream mixture into graham cracker crust.
Garnish top of pie with more berries if desired.
Cover with plastic wrap.
Place in freezer for at least 4 hours or overnight.
Slice into eight wedges with a knife heated under warm water.
Garnish pie slices with whipped cream if desired.
