Healthy raspberry oatmeal bar

  • 1 punnet Driscoll’s raspberries (125 g)
  • 130 gram whole meal flour
  • 90 gram of oats
  • 65 gram plain flour
  • 75 gram shredded coconut, roasted
  • 90 gram of palm sugar
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 120 gram of coconut oil, melted
  • 2 egg whites

Grab one of these healthy raspberry oatmeal bars for breakfast and start your day off right!

Directions

  • Preheat the oven to 175 °C.
  • Line a baking tray of approximately 10 x 10 inches with baking paper and make sure it goes up the sides.
  • Mix the wholemeal flour, oats, plain flour, coconut, sugar, nutmeg and salt with your hand until it is thoroughly mixed.
  • Add the coconut oil and egg whites so that you get a wet dough.
  • Divide the dough in pieces 1/3 and 2/3.
  • Press the large piece into the bottom of the baking tin.
  • Mash the raspberries with a fork in a separate bowl and spread over the bottom layer of dough.
  • Crumble the remaining dough and scatter this over the raspberry layer.
  • Bake the bars in 30 minutes until they are golden brown and leave to cool down for 10 minutes in the baking tin.
  • Lift the bars from the tin with the paper on the sides onto a cooling rack.
  • Cut into bars when completely cool.
