Caramelized Strawberry Creamsicles Easy Homemade Popsicle

  • 15 ml water
  • 5 ml cornstarch
  • 30 g unsalted butter
  • 450 g Driscolls strawberries, hulled and diced into 1/4-inch pieces
  • 60 g light brown sugar
  • 60 ml honey
  • 1/4 tsp salt
  • 180 ml whole milk
  • 120 ml plain or vanilla Greek yogurt

Beat the heat with a creamy homemade creamsicle filled with Greek yogurt and chunks of deeply flavorful strawberries. These treats are sure to please!

Directions

Pour 15 ml water into a small bowl.

Add 5 ml cornstarch.

Stir until cornstarch is completely suspended in water.

Set aside cornstarch mixture.

Melt 30 g butter in a medium saucepan.

Add 450 g strawberries, diced into 1/4-inch pieces.

Toss ingredients and ensure strawberries are evenly coated with butter.

Cook 2 minutes over medium heat.

Add 60 g brown sugar, 60 ml honey, and 1/4 teaspoon salt.

Cook uncovered and stir occasionally until liquid is reduced and thickened, 12 – 15 minutes.

Stir cornstarch mixture again and add to strawberry mixture.

Bring mixture to a boil and cook until thickened, about 2 minutes.

Allow strawberry mixture to cool completely.

Pour 180 ml whole milk into a large spouted measuring cup.

Add 120 ml plain or vanilla Greek yogurt.

Stir to combine ingredients.

Add strawberry mixture and stir until mixture is evenly pink.

Divide mixture evenly between 8 – 10 popsicle molds.

Freeze at least 6 hours or up to overnight.

Serve immediately or store in freezer until needed.
