Blueberry Mint Lemonade

  • 100 gram sugar
  • 500 ml cold water, divided
  • 15 grams fresh mint leaves
  • 240 ml fresh lemon juice
  • 340 gram Driscoll's Blueberries, divided
  • Handful of ice cubes
  • Seltzer water (optional)

Simple syrup is a combination of water and sugar cooked until the sugar dissolves. It is handy to have around for making a batch of clear lemonade. Make more than you need and keep in the refrigerator for cocktails or to sweeten iced coffee or tea

Directions

PLACE 100 gram of sugar into a small saucepan.
ADD 125 ml of the water, 170 gram blueberries, and the mint leaves.
BRING blueberry simple syrup to a simmer over medium heat and STIR occasionally until sugar dissolves, 3-6 minutes.
MASH berries gently with back of a wooden spoon.
REMOVE from heat and ALLOW to cool to room temperature.
STRAIN blueberry simple syrup through a fine mesh sieve into a tall pitcher and DISCARD solids.
STIR in the lemon juice.
STIR in remaining water and aside lemonade.
DIVIDE the ice cubes between 4 tall glasses.
TOP each glass with several blueberries.
DIVIDE lemonade between glasses.
TOP with seltzer water, if desired.
SERVE Blueberry Mint Lemonade immediately.
