Banana bread breakfast

  • 2 punnets of Driscoll's blueberries (125 g)
  • 240 ml buttermilk
  • 2 eggs
  • 2 bananas
  • 260 g wheat flour
  • 90 g oats
  • 130 g brown sugar
  • 80 g canola oil
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Directions

  • Preheat the oven to 190°C
  • Grease a large baking tin and dust lightly with flour
  • Mix the buttermilk, eggs, banana, sugar and oil in a large bowl
  • Measure out the flour, oats, baking powder, cinnamon, salt and baking soda in a separate bowl
  • Slowly sieve the flour mixture into the buttermilk and stir together with blueberries
  • Fill the baking tin with banana blueberry batter
  • Bake for about 1 hour
  • Cool in baking tin for 15 minutes and carefully remove from the baking tin
  • Resist temptation and let the bread rest on a wire rack
  • Slice and enjoy!
