Mixed Berry Parfait with Steel-Cut Granola

  • Granola:
  • 60 ml of maple syrup
  • 2 Tablespoons honey
  • 2 Tablespoons canola oil
  • 1 1/2 Teaspoons vanilla extract
  • 90 grams of steel-cut oats
  • 90 grams of old-fashioned oats
  • 20 grams of wheat germ
  • 20 grams of flax seeds
  • 70 grams of sliced almonds
  • Parfait:
  • 1 L low-fat vanilla yogurt
  • 400 grams Driscoll's Blackberries, Blueberries and/or Raspberries

Crunchy steel-cut oats are a great addition to this whole-grain-packed homemade granola. The recipe makes 4 cups granola. Use half for parfaits and store the remaining in an airtight container. Layer parfait with a mixture of blackberries, blueberries and raspberries. Make up to 1 hour ahead of serving.

Directions

Preheat oven to 160°C. Lightly grease rimmed baking sheet.
Whisk together maple syrup, honey, oil and vanilla in a large bowl. Combine steel-cut oats, old-fashioned oats, wheat germ, flax seeds and almonds in a medium bowl. Add oat mixture to maple syrup mixture and stir until evenly coated. Spread mixture on prepared baking sheet.
Bake about 25 minutes or until crisp and golden, stirring every 10 minutes.
Make 2 layers of 125 ml yogurt, 30 grams granola and 25 grams of berries for each layer in a parfait or wine glass. Repeat with remaining yogurt, berries and granola.
