Fruity Shrimp Skewers

  • 1 punnet of Driscoll's blackberries (125 g)
  • 12 wooden skewers
  • 1 mango, cut in ½ cm thick pieces
  • 400 g uncooked shrimp, peeled
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh ginger
  • 1 clove garlic, crushed

Summer sizzles with these juicy blackberry skewers, top this delicious meal of with a spicy ginger marinade.

Directions

  • Preheat a barbecue or grill pan to a high heat
  • Put the blackberries, mango and shrimp on the wooden skewers, equally distributing ingredients
  • Make the marinade by mixing the soy sauce, vinegar, sugar, oil, ginger and garlic in a bowl
  • Brush the sticky glaze onto the skewers, covering everything generously
  • Grill the skewers for 3 minutes each side, turning them carefully
  • Serve warm or at room temperature
  • Berrylicious!
