  • 250g Driscoll's blueberries
  • 4 chicken breasts (125 g)
  • 50 g chopped shallots
  • 50 g chopped red pepper
  • 2 cloves garlic
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried basil
  • 2 tablespoons fresh basil
  • 2 teaspoons sugar
  • 1/4 teaspoons coriander
  • 1/2 teaspoon salt

Blueberry recipes

Bring a little bit of salsa to your life with this yummy chicken meal with blueberry relish. Simple to make, delightful to taste!


  • Put the chicken, garlic, 1 tablespoon vinegar, oil and dried basil in a bowl
  • Cover with plastic wrap, and refrigerate for 1 hour whilst the marinade works its magic
  • Add 1 tablespoon vinegar, 1½ punnets of blueberries, the shallots, red pepper, fresh basil, sugar, coriander and salt to a separate bowl and mix well
  • Remove chicken from the refrigerator and allow it to return to room temperature
  • Season chicken breasts with salt and place in a sizzling grill pan
  • Cook for approximately 5 minutes each side
  • Serve with the blueberry blast relish and remaining blueberries
  • Blueberry heaven!
